Beef Cannelloni with Gorgonzola Sauce

Ingredients

1-1/2 Tbsp. butter
3 Tbsp. milk
½ tsp.salt
2 oz. Gorgonzola
2 Tbsp. heavy cream
3 Tbsp. freshly grated Parmesan
2 Tbsp. lightly toasted pine nuts
4 oz. fresh spinach, stemmed, washed and chopped

Method

1. Melt butter in a small saucepan. Add milk, salt, and Gorgonzola. Cook over medium low heat and stir to break up Gorgonzola, cook until melted.
2. Add cream and stir over low heat, until sauce has thickened about 10 minutes.
3. Meanwhile on a plate, place a damp paper towel, place the cannelloni on the paper towel cover with plastic wrap, poke holes in wrap, microwave for 1.5 minutes, turn cannelloni, and microwave another 1.5 minutes, until hot.
4. For serving, place 3 cannelloni each on 2 plates. Stir in Parmesan and spinach into Gorgonzola sauce, stir until heated through, cover the cannelloni with sauce. Garnish with toasted pine nuts, and flat leaf parsley.
